Ingredients 2 tbs olive oil1 red onion, diced1 large red bell pepper, diced1 jalapeno or serrano chile3 oz tomato paste2 pounds peeled and deveined shrimp½ pound scallops, quartered1 pound PEI mussels1 jar oyster salsa24 oz chicken or fish stock½ pound grain of choice (pastina, couscous, rice) Instructions In a large Dutch oven, sweat onion and peppers.Add tomato paste and cook over medium heat until it begins to darken, 2-3 minutes.Add stock and salsa and bring to a simmer.Add grain and cook until 5 minutes from done.Add shrimp, scallops, and mussels.Serve with grilled baguette.
