Cioppino
Cioppino Recipe

- 2 tbs olive oil
- 1 red onion, diced
- 1 large red bell pepper, diced
- 1 jalapeno or serrano chile
- 3 oz tomato paste
- 2 pounds peeled and deveined shrimp
- ½ pound scallops, quartered
- 1 pound PEI mussels
- 1 jar oyster salsa
- 24 oz chicken or fish stock
- ½ pound grain of choice (pastina, couscous, rice)
Instructions
- In a large Dutch oven, sweat onion and peppers.
- Add tomato paste and cook over medium heat until it begins to darken, 2-3 minutes.
- Add stock and salsa and bring to a simmer.
- Add grain and cook until 5 minutes from done.
- Add shrimp, scallops, and mussels.
- Serve with grilled baguette.
