Cioppino Recipe

Ingredients

  • 2 tbs olive oil
  • 1 red onion, diced
  • 1 large red bell pepper, diced
  • 1 jalapeno or serrano chile
  • 3 oz tomato paste
  • 2 pounds peeled and deveined shrimp
  • ½ pound scallops, quartered
  • 1 pound PEI mussels
  • 1 jar oyster salsa
  • 24 oz chicken or fish stock
  • ½ pound grain of choice (pastina, couscous, rice)

Instructions

  • In a large Dutch oven, sweat onion and peppers.
  • Add tomato paste and cook over medium heat until it begins to darken, 2-3 minutes.
  • Add stock and salsa and bring to a simmer.
  • Add grain and cook until 5 minutes from done.
  • Add shrimp, scallops, and mussels.
  • Serve with grilled baguette.
