Crab and Corn Fritter
Crab and Corn Fritter Recipe

- 1 cup cornmeal
- ¼ cup all purpose flour
- 1.5 tsp baking soda
- ¼ tsp salt
- 1 egg
- ¾ warm milk
- ½ cup cooked corn (I used steamed, but canned or grilled would also be nice)
- ⅓ crab meat (go for claw or lump, it's going to break up quite a bit during mixing, no sense paying for jumbo lump)
- 2 tsp seafood seasoning of choice
- Optional: ½ jalapeno, seeded and diced small
- ½ cup all-purpose flour
Instructions
- Whisk dry ingredients in large bowl.
- Gently beat egg and milk in separate bowl.
- Add egg and milk mixture to dry mixture and stir just until combined.
- Some small lumps may remain.
- Combine fritter base, corn, crab, seafood seasoning, and jalapeno if using.
- Refrigerate the batter for at least 30 minutes.
- Scoop chilled batter by rounded tablespoons and roll into balls.
- Dredge in flour.
- Deep fry at 350 degrees until golden.
- Serve with oyster salsa.
