Scallop and Shrimp Ceviche Recipe

Ingredients

  • ½ pound raw, peeled and deveined shrimp, cut into bit size pieces
  • 4 large scallops, sliced horizontally into 4 pieces
  • Optional: 2 small octopus, poached and tentacles removed
  • 1 diced persian cucumber
  • 2 diced jalapeno or serrano chiles, seeded and diced
  • 2 scallions, diced
  • 4 tbs diced red onion
  • 1 bunch cilantro
  • 4 limes, juiced
  • 2 tomatillos, diced
  • ½ cup oyster salsa
  • shaved radish
  • cilantro

Instructions

  • Combine all dressing ingredients.
  • Mix dressing with raw shrimp, scallops, and octopus, if using.
  • Allow to marinate for at least one hour and up to 4 hours.
  • Arrange on a plate and top with sea salt, radish, and cilantro.
  • Serve with tortilla chips.
