Scallop and Shrimp Ceviche Recipe

- ½ pound raw, peeled and deveined shrimp, cut into bit size pieces
- 4 large scallops, sliced horizontally into 4 pieces
- Optional: 2 small octopus, poached and tentacles removed
- 1 diced persian cucumber
- 2 diced jalapeno or serrano chiles, seeded and diced
- 2 scallions, diced
- 4 tbs diced red onion
- 1 bunch cilantro
- 4 limes, juiced
- 2 tomatillos, diced
- ½ cup oyster salsa
- shaved radish
- cilantro
Instructions
- Combine all dressing ingredients.
- Mix dressing with raw shrimp, scallops, and octopus, if using.
- Allow to marinate for at least one hour and up to 4 hours.
- Arrange on a plate and top with sea salt, radish, and cilantro.
- Serve with tortilla chips.
